Top 5 Vegan Musikfest Foods 2016

1 . VEGAN TACOS – Ticas Tacos, near Volksplatz, North Side

Hello, lover. Unofficially touted as “The Best Food of Musikfest 2016” by vegans and non-vegans alike, if you only get one stop, make it Ticas Tacos. This is fresh, thoughtful food with a ton of flavor. The standard vegan taco comes with: black beans, hominy, sweet plantain, pickled red onion, pineapple pico, and chipotle vinaigrette. Order one or ten, sold individually at 4 Tickets ($4) each.

Order Tip: Can also be made into a large BURRITO. Or ask for vegan “loaded fries”.

2. KIMCHI REUBEN (vegan) – Bees Knees Grille, near Volksplatz, North Side

Marbled rye toasted in coconut oil, hugging spicy small-batch kimchi, tempeh, melted vegan cheese and a little vegenaise for added creaminess. Served warm, sloppy, and delicious. This is an average size sandwich (not HUMONGOUS like much of the Musikfest food), but it’s delightfully messy and most importantly, quite tasty. A great meal that won’t leave you so full you can’t eat something else later. More snacks > less snacks, yeah?

Order Tip: Ask for it made vegan! They have dairy cheese, too, so be specific. 

3. CHOCOLATE DIPPED CHEESECAKE – Zuzu Confectionary, near Volksplatz, North Side

This is a yummy slice of vegan cheesecake on a stick, dipped in dark chocolate, with options for added toppings like sprinkles or peanuts. Cheesecake is made by the talented and lovely Sweet Doe Bakery, so obvs. it’s delicious! This stand has a ton of vegan options, though, so check out the gourmet popsicles if you’re not feelin’ creamy chocolate on a piece of wood.

Order Tip: You can order with or without chocolate and extra topics are $1.

4. AW SHUCKS CORN – North + South Sides, Multiple Stands

Leave it to a bunch of folks in Pennsylvania to be ENTHRALLED with corn. Eating this (and anticipating it for a year) is a ‘Fest rite of passage. This typically smothered-in-dairy snack is easily made vegan if you ask for it. Go see what all the fuss is about, and prepare to see more social media comments on your photos of CORN than photos of your children.

Order tip: No butter, no cheese. The other spice is vegan!

5. ISLAND NOODLES – North + South Sides, Multiple Stands

Carby thick noodles and veggies all stir fried together in a massive wok, with lots of sriracha on the condiment bar. Add as much as you want (all of it?). These are easily accessible no matter where you are inside the ‘Fest. They travel well if you need to use up food tickets, as the cardboard container folds up and closes for a BONUS SNACK later.

Order tip: Veggie with no meat.

BETHLEHEM VEGFEST 2014: See You Tomorrow!

Tomorrow is the Fourth Annual Bethlehem Vegfest! and I am so thrilled for this year, it’s hard to put into words. We’ll have Gene Baur of Farm Sanctaury and Matt Frazier of NoMeatAthlete.com, a vegan ice cream truck, the ever-beloved Cinnamon Snail food truck, and about a hundred million other wonderful people, speakers, chefs, vendors, and more.

Jaime K’s VEGAN GUIDE TO MUSIKFEST 2014

vegan musikfest.jpg   Disclaimer: Before we get into the best places to spend your food tickets at Musikfest 2014, I need to mention that this is meant to be helpful and fun. But PLEASE TAKE RESPONSIBILITY for your food – it never hurts to double check if cheese comes on a sandwich, or if a sauce is dairy-based. If someone puts ranch dressing all over your portobello wrap, please don’t be a jerk and write me an angry email about how I’m misleading the masses and my work is a sham and I’m the World’s Worst Vegan (if you do, it will promptly be deleted). Okie dokie?

That said, if you have any tips about how to order something, or found food worth mentioning, please let me know! As of now I haven’t eaten everything listed and made notes where needed, but I’ll continue to update this post as I make my way through the end of the ‘Fest. Your help and info is appreciated.

This list goes in geographical order, starting at the corner of Main + Broad Streets, down Main St., down the walkway behind the Hotel Bethlehem to the bottom (near Volksplatz), past Festplatz  and Plaza Tropical (moving toward Sand Island), over the bridge to the Southside and following 1st Street to Steelstacks (Main Stage and Americaplatz). You can get a map here, or download the Musikfest app which is GREAT and very helpful.

This list focuses on the things I think are most worthy of your Musikfest tickets, and does not include items you can easily find all over the Fest, like french fries, slushies, fresh lemonade, portobello wraps, and grilled veggies in various forms (wraps, sandwiches).

 STATIONS CAFE: Main Street next to the Brew WorksA small cart with handmade soft pretzels from their larger storefront (right behind the cart, which does offer vegan options on a regular basis). These may be the most delicious soft pretzels you’ll ever have, as they are made with coconut oil. Sometimes they have pretzels with fresh baked jalapeno slices on top. Carb heaven.

MEDITERRANEAN PLATTER STAND (?): Bottom of the hill near VolksplatzFalafel, hummus, tabouleh, stuffed grape leaves, and variations of all of the above sold in pita sandwich or platter form. *Make sure stuffed grape leaves are without meat. Order without tzatziki sauce.

BEES KNEES GRILL: Bottom of the hill near VolkzplatzOH MY GOSH! VEGAN GRILLED CHEESE. Hot sandwiches with fresh ingredients, including a TEMPEH + KIMCHI REUBEN with vegan cheese. Also vegan mozzarella, pesto, tempeh, arugula, avocado, & tomato on rye bread. They toast them using coconut oil instead of butter.

CACTUS BLUE MEXICAN: Near Volkzplatz – Their beans and rice are vegan, and they are happy to make vegan versions of burritos, tacos, salads, or chips + salsa and/or guac. The guacamole is DELICIOUS and you can score fresh chips + a huge pile of guac for $6/6tickets. They have “walking tacos” which are deconstructed tacos in a to-go container. Tasty and filling. Friendly locals.  (Also a Southside location.)

ZUZU CONFECTIONERY: Near Volkzplatz Gourmet popsicles that are vegan, nut, and soy free. Flavors include Pineapple Basil, Orange Coconut and Chocolate Sea Salt, among others. An upscale and more budget-friendly treat.

SPIRAL FRIED POTATO, somewhere, not sure where: Erin sent us this picture of a whole potato cut into an edible slinky then fried and covered in spices. I’ll be on the lookout for this to find the location, but in the meantime, it exists!

CASA DE JORGE SALSA (“THE SALSA GUY”): In Handwerkplatz, the section for crafters and makers, behind the Hotel Bethlehem – Not a food vendor, per se, but George is a nice local guy and makes unique varieties of salsa. He was happy to tell me he stopped using honey and now uses agave for sweetener, so nearly all flavors are vegan. You can sample his salsas and buy several to take home. If you’re up for a challenge, try his infamous “Stupid Hot” salsa and he’ll take a picture of your face as you regret your decision and put it on the Facebook page. Bonus: say hello to CHLOE THE SALSA DOG!

BETHLEHEM DAIRY STORE: Near Plaza Tropical – A decent selection of locally made flavored ice. Imagine a cross between Rita’s water ice and sherbet. Nothing fancy, but it’s tasty and refreshing and a good option for kids.

Rodale’s Mack Truck Cafe: At Steelstacks at the Levitt Pavilion/Americaplatz – Organic + local, Rodale operates this space YEAR ROUND for Levitt Pavilion shows, and Musikfest. The best choices are the veggie wrap with tofu, and the handcut sweet potato fries.

Not part of Musikfest, but worth mentioning:

THE JOINT is a coffee shop on North Side, just off Main Street in the Sun Inn Courtyard/Leiderplatz, that serves great coffee and has almond milk and usually a vegan soup and/or sandwich of the day, like a tofu bahn mi or chickpea salad (info on Facebook). During Musikfest they are serving up roasted chickpeas, and tater tots with a bunch of locally-made hot sauces, $2/each. Great people, vegan-friendly, much love.

SHANKARA is an all-vegan organic juice bar and eatery on the Southside a few minute walk from Steelstacks if you’re in need of health-focused and always delicious fusion food. You can get fresh juices, intensely creative organic meals, and Sunday Brunch. If you’re having dinner, reservations are recommended. First things first – this evening I’ll be roaming Bethlehem on foot, camera and notebook in tow, to document the Best Vegan Musikfest Foods of 2014. (It’s been three years since I last did that.) The food available for vegans has gotten better over the years, and tomorrow I’ll report back with with my top picks to help you navigate the other nine days of ‘Festing. Last Friday I attended the opening reception of Bethlehem House Art Gallery (fancy schmancy!) and the wee hours of the night outside with a few friends sharing deep thoughts + experiences on gender identity (one of the most delicious topics), and Saturday was spent surrounded by healers, yoginis, and lots of delicious (as always) food from Shankara at the first Lehigh Valley Yoga Festival. That gave me the chance to run next door and pay a visit to Greenmouth Juice Cafe which is, really and truly, holy-moly-gorgeous and their drink and small food menu are mostly vegan. Go there. Go. Go!

Sunday was a day of new experiences that left me baptized by the Lehigh River. My friend won tickets to go whitewater rafting at Whitewater Challengers (via a contest held by Discover Lehigh Valley, thanks dudes!). It was a whole-day experience, and eight miles of river, two pb +j sandwiches, three hilarious river guides, and two harshly sunburned knees later, I returned home to sleep for a hundred years. The best part was tossing our bodies over the sides into the chilly river, floating feet first, and looking up to see these places that have been my home and my personal geography for thirty years from the eye level of a fish. Floating past the trees, the towns, the Pennsylvania Turnpike. The theme of my life this year seems to be “new perspectives” and once again, I found a new one.

Lehigh Valley Style Magazine Has a New Columnist (and She’s Vegan)

I am honored to share my new bi-monthly column for Lehigh Valley Style magazine, Fresh Perspectives with Jaime K.

So much to say about the emotions of seeing this in print, but for now I’ll tell you: It’s the March issue and it’s on news stands now! Learn about my journey to become vegan and years later, to embrace the Lehigh Valley as my home for creative communities, young entrepreneurship, and vegan food (we keep getting luckier!). Going forward, the column will highlight people and businesses doing work I admire, be it art & design, mindful cooking, or making positive community and societal impacts.

Vegans & Valentine’s Day, Like Peas and Carrots (GET IT!?)

One of the most comforting things about being in the vegan community is that, when you’re lucky, it really is a community. Sure, we have the occasional naysayer, the “mean angry neighbor” type, yelling loudly that everyone is doing everything wrong, but most of us know that guy has just been through some hard things, so we embrace him with a knowing nod and continue to live in a way that expresses the infinite benefits of being vegan – especially the part of showing love.

When I was asked to spill my Valentine’s Day plans as part of Meet the Shannons’ annual “Vegans on Valentine’s Day” post,  oooh girl (in RuPaul voice), I was thrilled. Besides the fact that this year, for me, is a week-long romantic/celebratory extravaganza, and aside from having an admiration-crush on The Shannons (individually and collectively), this round-up includes vegan ladies who are Compassion Powerhouses, woman I admire and respect so much, and to be included among them is humbling and, frankly, made me squeal.

And because we’re sharing the love, allow me a moment to gush about my oodles of respect for Annie Shannon. She is someone I had been following online forever, and when I finally got to meet her and husband Dan at an event in New Jersey (hosted by Montclair Vegans) a year or two ago, I was nervous and excited.

It can be hard to remember that the people you look up to are REAL people. Not only do they live and breathe among us, they are humble and smart and witty, and work damn hard to make their personal dreams happen. True activists at heart, Annie and Dan found their way into homes across the world with The Betty Crocker Project, in which they veganized nearly every recipe in the classic Betty Crocker Cookbook.

I am forever and always inspired by people who feel compelled to do work that helps others, human or animal, a selfless drive to make the world a little better, and you can’t help but admire someone even more for when their intentions are pure.  Annie is hilarious and wonderful, and I saved and still revisit a conversation we had about plowing past negative online commenters and doing the hard work.

Love love love, it’s in the air.

Color Runs, Book Clubs, Farmer’s Markets and Links I Love

As it turned out, that weird stomach bug I thought was over when I made my last post hid itself away just long enough to trick me into thinking I was better, then woopsies I went out and got sick in a garbage can in a public place. New experiences happen all the time, right? Ew. I spent a few more days hunkered down in bed with peppermint tea and dog cuddles.

I was determined to make it to the Color Me Rad 5K, so I  laced up my sneakers and made it through feeling not just good, but strong and happy and oddly connected to the 7,000 people running along with me. It was beautiful! The Southside was  a stunning mosaic of galloping bodies and candy-colored clouds.

Everyone got RAD temporary tattoos, that um, seemed not-so-temporary, at least for the few days immediately following the run. I grew to love mine and briefly considered adding it to my forearm permanently. You are rad. I am rad. Life is pretty rad.

These hot, hot days have been perfect for unleashing a barrage of freckles, big ol’ salads every day for lunch, and fantasizing about the mint herbal tea from Horns. In my daydreams I am backstroking through a swimming pool of this stuff, laying across a raft with the World’s Longest Straw. Get yourself over there if you’re in the area. (*Horns had new owners take over within the last year, and they are super vegan-friendly, and friendly in general. And one of the STK! interns works there, so say hello!)

I’m now part of a feminist book club with some local ladies, and our first meeting involved a delicious array of vegan cheese spreads, fig + almond cake, fresh fruit, and some wonderful insight. Our first book was Naomi Wolf’s The Beauty Myth, and it listening to the personal stories of the group about how beauty, self-image, comparisons, weight, and family relationships have affected their lives really left me more aware of how I perceive others and myself.  (It’s awfully easy to make assumptions about folks and what their lives must be like, eh?) I am thankful for the openness and vulnerability of those in attendance who talked so candidly about deeply personal experiences, and the reinforced idea that we never really know what someone is going through, or has been through, especially when we only know them on a superficial level (or not at all).

Save the Kales! Vegan TV Show: Behind-The-Scenes at Brad’s Raw Foods

We visited the wonderful folks at Brad’s Raw Foods Chip Factory, located just a short drive outside of the Lehigh Valley, PA. Some of the sweetheart ladies on his staff made this little behind-the-scenes video on our filming day:

On the evening of the Winter Solstice, I took a pen and scribbled tiny, torn scraps of paper with the words and ideas I wanted to let go in the year ahead. I was at the home of a friend with a handful of other folks, some I knew better than others, and we shared the very sincere and open experience of acknowledging what we no longer want (writing it down) and symbolically releasing it (burning it to ash). Passing paper and pens around and each of us, silently, taking our turns saying

g o o d b y e

to any negative untruths, what has held us back, or prevented growth.

If it sounds a little eye-rolling and new-agey, it was. In the best possible way. There’s nothing like seeing your weakness literally turn to dust to give you a new frame of mind.

Last night, I got an email from a sweet girl who wants to start a blog. She asked, “How do you handle putting so much of yourself out there?”, impeccable timing because I have been wondering the same thing.

2012 was the year I put less out there. Moments and experiences and opportunities, and even some of the beauty of the minutiae of day-to-day life, were kept to myself or those I shared them with. It can be so exciting to have these magical tools that you tell anyone and everyone about anything and everything… but before long your life doesn’t feel valid if not enough people “like” it, and you’ve created a weird reality-show version of yourself (albiet unintentionally).

There’s another part, too. While hate-mail and comments are inevitable for anyone with a blog (or anyone doing just about anything, thanks to the internet) and I’ve learned so much about how to handle them when they come, there’s one that continues to stick out and I’ve let it prevent me from blogging some of my most important experiences.

Without glorifying The Meanest Email I’ve Ever Received, one small part of it suggested that Save the Kales! had become what so many other “lifestyle” blogs can become: A perfectly curated illusion of a perfect life with a perfect home and perfect food and a perfect relationship along with perfect clothes, friends, social life and material goods.

Wow.

It shook me, mainly because 1) I know those blogs, I have felt that way looking at them, the way you slink around your house after reading them, feeling ho-hum and wondering how you pulled the short straw in life and 2) I didn’t want to be a part of anything that made people feel bad about themselves. Because life is beautiful, but not perfect.

So I never wrote or shared photos of the biggest experiences of the last year. (Some are too precious, even now, and I like the feeling of keeping the best secrets just between me and the stars.) But in omitting experiences, I omitted the best part of blogging: reflection and appreciation, figuring-things-out and seeing life outside your own mind.

In her book This I Know, Susannah Conway writes on blogging:

“My blog began as a simple space to share my passions and talk about my days. There was no great plan… But as I became more comfortable sharing my feelings online, the healing path wasn’t far behind.

Blogging gave me back my voice after a year of feeling mute, the daily writing as a way to measure progress, the support from my readers such a boon on the days I crumbled, a collective cheer on the days I soared. I felt seen again, that I had a purpose, that my story was helping others, while they in turn helped me.”

Looking forward, I’ll continue to mind the gap between over-sharing and shamefully hiding. Save the Kales! began as an outlet in a time of crippling anxiety and depression, and to look back on how life has changed in almost three years since it began… that really is something. And it wasn’t because anyone handed me an answer — it happened because I worked my ass off to get better and actually got out and did things. I changed my perspective, I changed my life. Easy? Nope. Essential? Oh, yes yes yes.

While this blog will always be a “vegan blog” by default, I’m thrilled to get back to the roots of why I love to write (which are not unlike why I love to read): because through shared experiences we find purpose and connection.

The behind-the-scenes work is more than I could have thought possible if I hadn’t seen it first hand. Keep fighting the good fight.
