GINGER and the Skipper, too.

This a simple, fast and amazing recipe for an inexpensive and DELICIOUS dessert or snack.

What I had on hand – strawberries and peaches with a life capacity of only another day or two. I made this for dessert – it’s so easy I almost feel silly posting on here as a recipe, but I truly couldn’t believe the amazing flavors. It tasted like it should have taken several hours and a billion more ingredients… can things so good really come this easy?

  • 3 peaches, cut in chunks
  • 1/2 container strawberries, halved
  • juice of 1/2 lemon
  • 1 Tbsp. ginger, minced
  • 1 Tbsp. agave nectar
  • 1 tsp cinnamon

Put the cut fruit into a bowl. In a small bowl, whisk the lemon juice, ginger, agave, and cinnamon.

Pour “dressing” on fruit, and mix!

Garnish with a little cinnamon sprinkled on top, and the stem of a strawberry to look pretty.

Eat it all up at the end of a satisfying dinner outdoors! (Indoors is OK, too, and will not affect the taste of the food.)

Until next time, take care of yourselves. EVERYONE I know has been or is currently sick,  with my name recently added to that roster. Drink fluids (not solids, HA ha) and get a lot of rest! Love, Mom Jaime

  1. YUM! But what pray tell are those beautiful little dumplings in the foreground? Pierogis or potstickers? I’m going to guess potstickers because of the peanuts on top, but those look tantalizing, too!
